It is one of the easiest recipes which I make for Potlucks.
Ingredients
Rice ---------------------> 2 Cups
Brinjal ------------------> 8 purple ones, chopped lengthwise
Salt ---------------------> A2Y taste
To Grind:
Cocunut ----------------> 1 Cup shredded
Cinnamon --------------> 2 sticks
Cloves ------------------> 4
Corriander Seeds ------> 4 tsp
Urad Dhal --------------> 2 tsp
Red Chillies ------------> 5
Peppercorns -----------> 1 tsp
Tamarind --------------> Small lemon size
· Dry roast all of the items
· Grind everything to make a coarse mixture
Seasoning:
Mustard Seeds --------> 1 tsp
Curry leaves -----------> 2 strands
Gingelly Oil -------------> 3 tsp
Method:
· Cook the rice and let it cool
· Do the seasoning in a Sauté Pan
· Add Brinjal and fry for few minutes with salt
· Once it is cooked, add the Coconut mixture and leave it fro few minutes
· Mix it with the rice
· Serve with Raita or Vegetable Kurma
Ideas:
ü Once I tried making with Green Peppers. It came out good. So as Cauliflowers. My DH liked the Cauliflower version more.
ü Have to try with Quinoa and Brown Rice instead of Basmati Rice
